Mudéjar Oil
The company manufactures and packs extra virgin olive oil and is located in Monda, one of the villages of Sierra de las Nievas, a natural landscape whose environment has been declared a biosphere reserve by UNESCO because of the special characteristics of its flora and fauna.
It is a montainous landscape full of uneven high peaks; set in a mineral plural and chaning land, and with a soft weather due to the close location to the sea that the Costa del Sol has.
Besides the Mediterranean vegetation native to its situation in a mountainous area, there are some small familiy olive tree exploitation where less common varieties still can be found (picudilla, lechín, verdial, manzanilla aloreña); usually grafted on to the feet of a wild olive tree and grown with ancient techniques that exclude or limit the use of pesticides, herbicides and chemical fertilizers.
The centre of the small plantation in the broken hillsides in the heart of the mountain range is formed by ancient old olive trees.
In this paradies of diversity, small broken olives are picked from certain olive trees that, because of their antiquity, priviledge location or exceptional quality of the fruit that deserve the Mudéjar Special Edition “Selección” label.
They have collected the Múdejar Special Edition “Acebuche” by packing a meagre production of wild olive tree oil, obtained —almost with an artisanal process— from the tiny acebuchinas olives they pick from the heart of the mountain range.
Nowadays, one of their bigger and their most optimistic project is the manufacture of Olive oil of the Acebuchina variety, the oil of the mother tree: the Olea oleaster. It should be noted that the production is scarce and very dependent on climate conditions.
A gem created only fort the most demanding palates.
For obvious reasons, Múdejar Special Edition is a limited production and it can be out of stock.

Smell: fruity from the green olive with ripe soft tones, emphasizing the freshly cut grass, tomato, banana and critic aromas.
Flavour: sweet with a slight bitterness and spiciness when first trying it that makes the flavours balanced. The aftertaste is characterized by previous aromas with tones of tomato, almond and apple.
Its clean look, golden colour and soft taste that resembles the smell of the olive tree make this olive unmistakable and perfect for any diet.
