Manilva Winery
Bodegas Manilva is a winery that was born from a project of three families that in 2016.
At Bodegas Manilva, after making their first “experimental” Kalma wine and detecting its great qualities, represented in its flavor, smell, aroma and color, they decided to form Bodegas Manilva , a cellar where this extraordinary wine has been made since 2017.
Bodegas Manilva is located in the Malaga municipality of Manilva and they use 100% Moscatel de Alejandría grapes to make their wines.
Likewise, the vineyard has more than 6 hectares of old vines (between 50 and 70 years old), with white Albariza soil, located in the south of Europe and with wonderful views of the Mediterranean Sea, owned by Diego, one of the partners of the winery. .
Kalma – Sierras de Málaga Protected Designation of Origin
As for its dry white wine made from Moscatel de Alejandría grapes, from the Pampanito hill in Manilva. It has DO Sierras de Málaga.
The harvest is manual, in a 20 kilo box, and takes place during the second half of August.
Its preparation involves cold maceration of whole grapes and controlled fermentation at 16 degrees in stainless steel tanks.
Its alcoholic strength is between 13 to 13.5 degrees.
The bright pale yellow color with greenish touches has a very attractive tone.
Its smell is clean and intense with fresh aromas.
Likewise, it has very fine notes of citrus on a background of white flowers.
The taste is fruity, dry with fatty sensations.
Finally, its structure in the mouth is very balanced, powerful and elegant on the palate.
Pampanito – Protected Designation of Origin Malaga
Regarding its Pampanito wine, it is traditionally grown in dry land, with vineyards facing west and just over 1km from the sea.
Late harvest, with overripe grapes, hanging the grapes on racks for natural sunlight.
For production, overripe grapes are used, harvested on the same day, and raisined, about 30%, and everything is pressed together.
The extracted must is sieved and undergoes fermentation, this is completely natural in a wooden barrel.
It has a dark golden amber color due to oxidative aging, with aromas of jams and caramelized fruits on the nose.
