Flor Bermeja
Flor Bermeja is a family cheese factory specialized in the production of artisan Malaga goat cheese.
Flor Bermeja was born with the clear intention to value the cheese as an artisan product, for this, made in a traditional way using a high quality raw material, as their goats graze in the Sierra and feed on the pastures of the environment transferring to our cheeses aromas and flavors differentiated.
All the products are elaborated by its master cheesemaker Melania Pico differentiating itself from the rest by trying to bring an innovative touch respecting the traditional way of elaboration that their ancestors carried out in the villages of Malaga, Andalusian province with a great cheesemaking tradition.
All this makes its cheese a healthy quality product with great aroma and flavor that leaves no one indifferent.
Products
Fresh cheese : they elaborate this product using a traditional cheese recipe from Málaga. It is white and compact, creamy and has fresh milk tones.
Semi-mature : aged for at least two months, their semi-mature cheeses are yellow in the inside and have a creamy and soft texture. Their flavour is slightly bitter.
Mature : they made this cheese using pasteurized milk and raw milk that has been aged for at least four months. Their mature cheeses have a strong and creamy texture.
Cream cheese : made from fresh milk seasoned with different spices, such as pepper, garlic and parsley and even jams and preserves. Its creamy texture makes it versatile for many recipes.
Extra virgin olive oil cheese bonbon : artisanal milk bonbons that follow traditional French recipes. They are aged and then preserved in extra virgin olive oil seasoned with several spices.
Goat cheese roll from Málaga : they wake their goat cheese rolls in different sizes and varieties: fresh and mature cheeses. Their flavour is bitter, their texture is soft and easy to swallow.
“ZAMBRA” ash cheese : this squared cheese is black on the outside because it is covered with edible ash and white Penicilium Candidum. It is aged for at least 20 days and the inside is creamy and white colour.
